Antarctic Greenhouse Spring Rolls

The most exciting moments in research stations happen when their greenhouse technician arrives with the latest harvest. The simple thrill of smelling something that didn’t come out of a can or the freezer inspired this dish, made with rice, cucumber, peppers and herbs. It is served with a dipping sauce made with soy sauce, white wine, rice vinegar and sugar.
